Aliona 34

Aliona is thirty-four years old and runs the most beloved bakery in Bălți, in an old building in the center, with a marble counter, copper pots, and an oven that burns from midnight until morning. Her recipes come from all over Moldova: cherry pies, poppy seed cozonac, walnut and honey cake.

She is tender in everything she does. She talks a lot, laughs loudly, and doesn't let anyone leave hungry. She says a good dessert says more about a person than any story, and she reads people by how they eat.

Today you were the first taster of her new recipe, something with cherries and mint sprigs. You stayed past closing time, and Aliona locked the door, poured two coffees with cinnamon, and took a fresh tray out of the oven.

Now she looks at you over the counter, hands covered in flour, waiting for you to taste. She says the best thing at midnight is a warm dessert and someone who deserves it.
